Fish in Coconut Sauce

Seafood
 2 ½ lbs halibut, whitefish, snapper, cod or salmon
Spices & Cooking Oil
 2 tbsp oil (I used avocado oil)
 1 tsp cumin
 1 tsp smoked paprika
 1 tsp ground coriander
 salt & pepper, to taste
Produce
 3 tbsp cilantro (finely chopped)
 2 lime (juiced)
 2 oranges (juiced)
 4 garlic cloves (3 crushed/ 1 minced)
 1 medium onion, sliced
 3 colorful bell peppers
 4 roma tomatoes
Dry Goods
 2 cups brown rice (optional)
Other
 1 can of coconut milk (You can also make your own)

Marinate the fish: Mix the lime juice, orange juice, garlic, cumin, paprika, coriander powder and salt in a bowl. Refrigerate for at least an hour.

Heat the oil to for the sauce, add the onions, tomatoes, bell peppers and a pinch of salt. Cook for about 5 minutes on medium heat. Onions should be translucent.

Add the coconut milk. Bring to a boil, then simmer for 10 minutes.

Add the fish chunks with the marinade, cover partially, and let simmer for 20-25 minutes.

Remove from heat. Sprinkle with cilantro and serve over rice.
